Made these salumi in December they are now dry enough to please me ... I like them extra dry. Two were in 4 inch casings and 2 in the fancy Hukie casings.
Removed the casings and took a slice so you could see it.

This one I used the fancy casing but as the shrink so much it wasn't even decernable in the final product. What a PITA to get the stings off the casings! They practically grew around the netting and made it really tough to get them off to slice.

We had a sandwich, packaged the rest and I made a few calls >>>> an hour later - Gone!
Well at least I have an empty cave again!

That's on my list to try to make eventually, but I have a long way to go before I get there.
