Hi all,
I've been looking for a while and thought I'd have the manners to join and say hello :-)
I've been a cheesemaker for 10 years with a 10 year gap (til now)
A friend asked if I would help him set up a boutique cheese palour so it stirred up my cheese brain.. Yay for cheese.
Hope I can contribute from time to time.

Hello sicoxnz/Simon and welcome to this forum, I think you are the first Kiwi here! Great to hear you have lots of aged cheese making experience, (excuse the pun) and look forward to your advise.

You are the second person (while helping) looking at getting into the small artisan retail business of cheese, other was "Milk Made Farm" with her post here (http://cheeseforum.org/forum/index.php/topic,331.msg1607.html#msg1607).

So I've just split the Cheese Buying and Selling Board in two so that there is a dedicated place (http://cheeseforum.org/forum/index.php/board,58.0.html) for you two and anyone to discuss selling cheese or other milk based products and all it's issues.

Would love to hear your and friends plans as many here may one day be aspiring cheese artisan's rather than hobbiests.

Welcome aboard!  Let me tell you, I have had some of the best cheese I've ever tried come from New Zealand.  One of my favorites is a Parmigian that came from down there.  I do have to say you guys make one heck of a butter as well.  I come from the selling & buying side of the cheese business, so any help I can offer about opening up a cheese shop I'm more then happy to offer.

Goodness.. lots have happened since my last post..
As the cheese ad on tv here states "Good things take time"
Well since my last post there is still no cheese "shop" however have made a few trial batches using raw milk.
Lots of fun made some Ricotta Salata and, Brie, and Feta just to see what was required..
On to some hard cheeses now, just have to complete building a half decent press.

Simon, there are some cool threads about cheese press building.  I marvel at the range of designs.

Good luck with all the cheese making.  Hope you post some photos!!!!
