Found this 5 minute 6 second video interview on iFoods.tv of Duhallow Cheese Makers (http://ifoods.tv/all-recipes/Duhallow-Irish-Farmhouse-Cheese/187/) in County Cork Ireland on their what looks like rind washed semi-soft cheese.
Interesting how crudely the curd is cut and looks like they only use a horizontal cut and basically keep cutting the curds until all roughly the same right size.
