Title: Cheese making exhibit?

Greetings folks.
I have been asked to put together some sort of cheese making exhibit for a local one horse towns 150 year anniversary, and have no idea what I would do.
Any suggestions?  What kind of cheese would they of made 150 years ago in the Pacific Northwest gold and logging country?

Howdy Brian, one horse and you are on it!

Sounds fun, how about an exhibit of what ever you have, books, equipment, ingredients, basic steps for soft and pressed cheeses, pictures off of this website and forum, and of course any results you have (not eaten ;D)?

You always plug this website's name, more people are always better ;).
