Title: What are your top 10 cheeses?

Hello,

I've searched through the forum looking for "favorite Cheeses" and haven't found that question asked.  I also tried to find other heading to put this under.  Having found none, I'd like to ask the question,

"what are your favorite top 10 cheeses?"
and
"Do you have one favorite and what is it?" 

If this has been asked before, discussed to some length, or posted in another section, please forgive me.  I am new.  :)

not in order

1. Camembert
2. Comte
3. Stilton
4. Humboldt Fog
5. 4-8 yr Gouda
6. Goat Gouda
7. Chevre
8. Champignon
9. Manchego
10.4-8 yr Cheddar

Top Cheese... Cambazola or Castello Blue

There are many others I love like Midnight Moon, Welsh Cheddar, Jarlesberg, St. Andre, Port Salut, Porter Cheddar, Le Delice de Bourgorgne, etc.  This was a bit difficult, please post yours.

Favourite cheeses to eat, or to make?

My faves to eat are:
Dubliner
Gruyere
Well aged cheddar.  The older the better.  I can sometimes get access to an Ontario 10 year, which is a real gem.
Port Salut

I generally like all cheeses aside from blue, but these 4 are my tops.  Getting artisinal  cheeses is unfortunately such a rare treat for me that when I do get them, I usually end up sticking to what I like.

Cool idea for a topic.  Your favourites seem to be all over the board.  Blues, hard cheeses, soft cheeses, washed etc.

I honestly love all types of cheeses, I also have a fondness for Limburger.  Also anything in the blues.  Especially the Blue/Brie types.  Look forward to trying Stinking Bishop someday. 

Our Chef at the theater I work was able to get me 4 yr Gouda and 8 year cheddar.  Oh man those little protein crystals are a treat.  Cheese with pop-rocks. 

I must admit too I love old Velveeta. Childhood favorite.

Velveeta was a staple in my house.  Salmon sandwiches on "brown bread" with Velveeta on the side.  Though, I have always found it disconcerting that the metal foil of Velveeta will grow mold, but the cheese itself will not.

Ten choices...too much, and yet...not enough. There are many cheeses which please my palate, but too many choices dilute the focus. If I had to devote my attention to just a handful, these are the ones that would carry me through thick and thin. Except for the Blue Castello, I have been able to craft reasonable facsimiles.

You peeps really make me want to try Beaufort.

Bellavitano (tastes like parm but has body of a cheddar)
Aged gouda (18 months +)
Gruyère
Saint Paulin

The thing is I like all cheeses except mainly two characteristics: Blue and any cheese that has too much of an earthy taste like camembert. Funny thing about blue cheeses is I absolutely love them in recipes though.

FWIW, Formaggio Kitchen has some wonderful alpage Beaufort (http://www.formaggiokitchen.com/shop/product_info.php?products_id=1107) in.  I'm stealing the rind for flora capture.

Well aged Cheddar (I have been able to get a great flavor and texture at 1 1/2 years)
Parmesan
Roquefort
Gruyere
Stilton

Those are the ones I love to eat AND make....Now if I could get the Epoisses right.  I have several coming
along.  Everything seems good except the color is too pale.  Maybe I'll figure that out too!

Probably my all time fave , especially when flavored with Dill , Garlic , Onion or others.

Gorgonzola Picante (actually my favorite Gorgonzola is my own, goat's milk--and it is the best when aged 10-11 months)  ;D
Chevre
Crottin
Parmesan (especially my goat's milk Parmesan)
