I made a wheel of Pecorino Romano around the end of March. While aging, my cheese cracked in a few places. I washed the mold off of the wheel and placed it into a Rubbermaid container with a damp paper towel. Thankfully the cracks disappeared within 4 days. Well, last night I washed the mold off of the cheese again and low and behold there were a few cracks. I was wondering since the cheese is now 3 months old, should I wax it to keep it from further cracking or should I repeat the same steps as before to rid the cheese of its cracks? Thank you...

You can wax it to prevent further drying.
Cracking is likely from low humidity.
