Title: Milk to use for a newb

Good day all,

I have done my research in my area and there is a raw milk supplier just down the street from my house.  Question is as a person who hasn't done any cheese making (just LOTS of reading) should I start with store bought milk first?  Most of  the cheeses I will start with will be fresh and young cheeses.

Here in North Texas, I can only find ultrapasteurized milk in the supermarket -- no good for cheeses made with curds. However, I have successfully used Jersey cream (from Costco) and ultrapasteurized half and half for sour cream, cream fraise and cream cheese. Otherwise, I drive an hour into the country to a dairy for Jersey raw milk or raw goat's milk, which is expensive but works well at least for this newbie.

I, too, have gotten milk from Layla and was happy with the product. The small dairy I use is north of Denton and a bit closer to me. Good luck!

Oh, one more thought to add. I get fine raw goat's milk in Keller at Homestead Farms. Wonderful young couple run the dairy as well as growing organic produce and offering other local foods.

Ditto! Their milk works very well...good yields and good curds. Just wish they hadnt raised their prices by 20%...about 30-40 minutes from where I live.
