in search of cheese recommendations

i LOVE parmesan cheese and cheese and crackers is my favorite snack. unfortunately, however, i have found that parmesan is not the most cracker and cheese friendly cheese. it is too difficult to slice and the flavor is a bit rich for eating in that quantity imo, it really is best when used grated over or into a dish.

what would y'all recommend for a cheese similar in flavor to parmesan but more conducive to eating as a cheese and crackers snack?

I'm being creative here so it might not be to your liking.
Here goes, anyhow...
How about making a simple quick cream cheese?
When you are ready spread generously over your favourite crackers.
Here comes the speciality flourish...
Grate over a flavoursome layer of Parmesan to taste.
Finely slice tomato, cucumber, halve some olives and pickled onions.
Make a big heap of the above and retire to a quiet corner to devour your efforts :D

Have you tried Sartori Bellavitano? It's like a Cheddar/Parm hybrid. Cheddar texture, caramelly aged Gouda/Parm flavor. There's a recipe on here somewhere...

What about an Asiago or young Romano?  Both have some shorter aged, moister versions compared to a parmesan (you can feel how moist it is when you handle the package).  Lots of the same flavors.

Yes, an Asiago Pressato would probably be a good choice, with a similar but less robust taste, and requires only a short aging period of 1-3 months....
