Title: My second Russian age of 5 months
Post by: svetlen on February 15, 2014, 09:08:03 PM: The first was from raw milk which gave an unpleasant taste. But second of pasteurized milk certainly pleased, I just enjoy each slice. Dough cheese gentle elastic. The cheese has a pleasant, slightly spicy taste. On 10 liters was added acute lipase half dose.
Unusually increased eyes, so that in the last month on the cheese there was a crack in 5 mm and cracked paraffin. The picture above is visible trace of cracks.

With the nice eye formation in a 10 Litre make I wouldn't be suprised if a number of people give this a try. I for one wouldn't mind giving it a go at some point.

Double on that, Nathan. Svetlen, I hope you are safe as well, and thank you for posting such a wonderful cheese. A very impressive make! Would love to read your notes as well - I don't think you can get a better elasticity and the eye formation looks perfect. Thanks for sharing, and stay out of harm's way.

Yes , more info on the make would be nice , I just love the eyes you get in your cheese , I have yet to produce any quite like it , even with the addition of large doses of P. Shermanii.

Very nice texture as well.
