Title: My second Russian age of 5 months

The first was from raw milk which gave an unpleasant taste. But second of pasteurized milk certainly pleased, I just enjoy each slice. Dough cheese gentle elastic. The cheese has a pleasant, slightly spicy taste. On 10 liters was added acute lipase half dose.     
Unusually increased eyes, so that in the last month on the cheese there was a crack in 5 mm and cracked paraffin. The picture above is visible trace of cracks.

This species has a store-bought cheese.

Just spotted this, very nice eye formation svetlan!  And great texture too, as it is very flexible.  nice!  Did you post the make notes anywhere?  With the nice eye formation in a 10 Litre make I wouldn't be suprised if a number of people give this a try.  I for one wouldn't mind giving it a go at some point.

Double on that, Nathan.  Svetlen, I hope you are safe as well, and thank you for posting such a wonderful cheese.  A very impressive make!  Would love to read your notes as well - I don't think you can get a better elasticity and the eye formation looks perfect.  Thanks for sharing, and stay out of harm's way.

Yes , more info on the make would be nice , I just love the eyes you get in your cheese , I have yet to produce any quite like it , even with the addition of large doses of P. Shermanii.

Very nice texture as well.

I have both Russian and Ukranian friends here in Dubai - all lovely people. My thought are with you and everyone involved in this worrying situation. Hopefully all will be resolved peacefully.

My son did his exchange year in university in Kiev, so Ukraine feels very close to us, he has lots of good friends there and the current situation is worrying. Stay safe.

That is a lovely-looking cheese. I too would like to learn how you made it.
