Title: Need Help With Puzzle

Hi all!  I'm having problem solving this so maybe you could help.  Thanks!  :D

Of the following I am none;
Mozzarella, Swiss, and Monterey Jack.
However, I will always be made
When you begin at the end.
What am I?

Because ricotta is made from the whey leftover when you make other cheeses.
