Cracking Emmental

Hi Everyone!
Well here is my prized Emmental i have been babying since its creation - 8 March. It has been in a warm environment since March 24 and today when i flipped it, i found these small cracks!! YIKES!!

What should i be doing about the cracks? Is this normal, could this mean the propionic shermanii has finished doing its job? Should i oil it?

I would be very concerned should these cracks get bigger. The recipe says to keep it in a warm environment for 3-4 weeks.

Anyone have any ideas?

I had smalls cracks like that appear on mine.  Just wipe it down with the wash or olive oil and they will magically dissappear until it dries out again.

Just a quick question to you about stilton, i realize this is not the same thread, but i promise, really quick...

as your stilton was aging, did the cheese have a sticky feel on the rind? Mine is 6 1/2 weeks old right now. Just wondering if i should be concerned. The RH reads 85-87% - temp 55-57

Often with Stilton style makes you will get some hitch-hikers along as well. Typical B Linens, and they can make it feel slimy or sticky.
Unless it starts smelling bad then you can probably ignore it.

Al has made more of this style cheese than me and may have more suggestions.

It was slightly sticky but dried out.  I left it out of the cave for about an hour a day.

Tanks guys for the feed back. i would say i am safe then. I will take it out as Al suggests.
