In my experience with blues, bitterness can result from under salting. It's a fine line between salty/bitter with blues. Took me quite sometime to get it right for my (high fat) milk.

Cool, I'll have to salt a little more aggressively next time then. As the big blue has been in the fridge it has gotten even better, but the edges near the rind are a little bitter. I would go so far as to call the center delicious at this point. Too bad it's just about gone!
