40 year old cheddar

I ran into this article about the 40 year old cheddar

So I started looking for some old cheddars to try and found some 2-16 years old at the Wisconsin Cheese Mart.  (I missed out on the 27 year old) I bought a sampler and I am currently into a 5 year old.  What a great cheese; sharp & creamy.

What's the oldest cheese you've aged or tried?

I've had 5 and 7 year old Cheddar , they were both great.

40 year old Cheddar would be great , I couldn't afford it though.

I'd love to get my hands on some of that 40 year old... it`s older than me!!!

I occasionally buy some 9 year old. Very good! That's the oldest I've seen in stores.

Spoons~ That 40 year old might have been a once in a lifetime opportunity!  The Wisconsin Cheese Mart just had a 27 year old, but it sold out fast.  I missed that one too.

40 years, I can't even imagine the overhead required for such an endeavor.

We have a company in Ontario, Maple Dale, that sells 1, 2, 5, and 10 year cheddar.  I've only had the 10 year, and it was pretty powerful stuff.

"William's Cheese" in Northern Michigan regularly sells a "13 year cheddar."  They are a pretty giant outfit known for processed cheese products, but do have a few real cheese gems available.

A co-worker brought me a 9 year old cheddar from his home town (Wisconsin).  I liked it, my wife liked it, the 12 month old liked it.  The 5, 7, and 8 year old boys thought it was disgusting...

I'm going to check them out. They are sold out of it right now.
