these make excellent accurate thermostatically controlled water baths for making your cheese. Just put another container inside and surround with water.

I have just bought a 1/1GN Bain Marie from eBay for £69 to use as a water bath and an STC-1000 temperature controller for £7.50 to give accurate control of the temperature. It will hold a 20L gastro pan so should cope with a reasonable batch. Will keep you posted.

Thanks for that info. I am probably being a dunce but what does the 1/1GN stand for? ???

1/1GN is the standard size for gastronorm pans used in the catering industry. The Bain Marie that I have ordered takes up to 1/1GN pans. I have ordered a 150mm deep 2/3GN pan which will hold up to 13.5L of milk and will not completely fill the Bain Marie so leaving plenty of space for the water bath to give an even heat.
