How often do you [need to] turn waxed cheeses? I don't have both books in front of me right now, but I believe Ricki Carroll recommends turning "hard cheeses" daily at first, then a few times a week, while David Asher says waxed cheeses don't really need to be turned (please correct me if I got that wrong).

Currently mine get turned every day for the first month or so and then about three times a week after that. It takes a while to do, and I'm wondering how important it is.

I would turn weekly for a few, then monthly.

Turning the cheese helps distribute the salt in the cheese, so as Bantams says, it's important to flip them at least weekly.  I never do waxed cheeses, so I'm not sure.  To be honest, even my older natural rind cheeses don't need to be flipped every day, but I still do it.  Nice to stay in contact with them and you can spot problems before they become a big issue (for example if the wax cracks).

My wife flips all our cheeses daily, even ones over a year old.... It may not be necessary, but it allows you to catch a crack in the wax, or a hole in a vacuum bag, before any harm is done....
