using cheese iron on a muslin wrapped cheese

(1/1)

broombank:
I wonder if someone experienced in muslin wrapping cheese could tell me how I can sample a cheese without removing the muslin? Is it acceptable to make a small hole into which the trier can go or will that let in undesirables ? I have a cheddar and a red leicester both lard /muslin covered and I don't want to risk spoiling them.

DeejayDebi:
I have not used this method but is there a place you can peel open the muslin and roll it back?

broombank:
Thanks for suggestion - actually its very difficult to do this - I ended up making a small incision in the muslin - just enough to put the iron in. I just didn't want to let in any other moulds.
