I've been making lots of hard cheeses with a cheese press my husband made, but it's getting funky.  I need a press that will press my two five pound molds together.  I usually stack them on top of each other.  I've been searching and searching, but can't find anything!
Does anyone have any suggestions?
Thanks!

What diameter are your molds and how high do they stack? How much weight do you need or PSI?

The dutch style press I built may suit your needs. I can get 8 PSI on a 7.5" mold (65lbs with a 5.5 MA). If you were to make the backboard out of hardwood rather than fir hardened with resin, I am sure you could get 10 PSI on a 7.5" mold without any a problem. A very basic design plan can be found in this thread:

I would just increase the height of the two vertical board by the same amount to accommodate stackable molds. As is, it can for 4.5", but a bit taller can't hurt.

I intentionally designed my Dutch press with enough vertical clearance to accommodate at least two 8", 10", or 12" molds stacked on top of each other.

I haven't done that yet, but I believe the press would get the job done.

Let's ferment something!
Bread, beer, wine, cheese...it's all good.
