Blue cheese and wrapping in foil. Why?

Why does blue cheese need to be wrapped in foil?
When should I wrap it?
How long should it stay wrapped?
Can I use clear cheese wrap instead of foil?

I made a few blue cheeses and aged them for 2 months un wrapped.   They looked like a brain (see photo) but tasted fantastic!
The one on the right is 3 months and never been wrapped.  The other two are about 2 weeks aged.

I've often wondered why foil too, although they bviously they have to be wrapped in something as they're softer than other cheeses with tough rinds or wax.

Those cheese look swell by the way especially the older one. I'd love to see the inside. Did you pierce them? I don't see any holes.

They are pierced and probably look swelled because of the photo.  The inside was like a creamy yellowish color but not creamy in texture.  In fact it was nice and firm.  It was not as marbled as I would have liked maybe because I didn't pierce it enough or the holes were too small.   The two new blues on the left and right I pierced with larger holes than the first blue I attempted.

I didn't mean swelled, or swollen, I meant swell as in good.

Those cheeses do look swell! I don't wrap my blues until I am finished ageing and ready to put them into the fridge to eat. I age them in plastic boxes on a rack with a little water for humidity.

started reading it... and before I even got to the bottom I started laughing because my grandpa always used to say to me "that's swell John".

yes very funny thread so far... but I am also interested to find answers to the initial questions asked about wrapping blues if anybody wants to throw their hat in the ring.

If you search on foil or check the blue threads, you'll no doubt find more recent discussions on wrapping blues.

You could start your own thread to get a fresh post about wrapping....
