First Stilton Success-So far!

Hi all!
I finally broke into the world of blues and am thrilled with how things are going so far! I made 2-1kilo wheels that are currently 13 days old and growing beautiful blue mold (never thought I'd be saying that!). I just brought them out of the "cave" to turn and decided to snap a couple pics (which I can't help but share 'cause I'm so excited!).
The first pics are straight out of the mould, then after smoothing, then today's pics, Enjoy!

What's your technique for smoothing?

My very first Stilton comes out of the hoop tomorrow night.  Very excited as well.  Made a 6" 3lb wheel.  Hot knife to smooth?

Hi Boofer!
I used some curds that I reserved from molding the cheeses (about 3-4 tablespoons worth) and pressed it into the little gaps and crevices, then smoothed with a small palette knife/cake decorating knife.

isnt it cool to wake up every morning and go into the cave and see with anticipation how it has changed.   I love it!!!   Great pics too!
