Hello from Kansas!

Have made quite a few soft cheeses and wanted to advance. I just made a proper press to make semi-soft and hard cheeses, successfully made a cheddar but couldn't wait long enough to age it and it is half eaten in my fridge.  Looking into getting a wine fridge for aging soon as well.

I'm a home brewer as well!

My favorite beers are Belgians.  My favorite kinds of cheeses are anything blue.

Welcome DannPM, lots of blue fans here, there are some Wiki's that should be useful, the Search function (how to optimize in the FAQ's Board then ask away!
