I sure hope that works good Boofer because I did the same thing. I had made annatto oil in the past for making mexican rice and aroz con pollo so I was familiar with the seeds. I used quite a bit in a colby I did recently but won't know how it came out until I get the wax off at Christmas time.

Will do. I'm assuming, incorrectly perhaps, that this stuff gets darker as the cheese ages. I'll certainly post some pictures of mine when I open it.
