Cheese leaking liquid in the fridge

Hi all,

I recently made my first semi-successful queso fresco; it tastes pretty good, looks all right (i was pretty excited about the sheer quantity of cheese even though it's not all that much) and I was pleased as far as a first run. As it's been sitting in a plastic container in the fridge, i've noticed small amounts of liquid pooling, and this has been consistent each day. I've wiped up the liquid to find it replaced within 12-24 hours.

What's causing this, and what can I do about it?

It's just whey escaping...shouldnt be a problem as long as you dont smell some really odd odors coming from the box. You can put something in the bottom of the box to keep the cheese up away from the whey that collects. More than likely it will settle down in a few days. Or...you could set it out and salt it lightly to allow it to drain further.

Great; it's good to know that it's just whey. I'd dab and turn the cheese to try to keep it from pooling and really soak the bottom, but now i'll try elevating it.
