Title: Feta Cheese with bubbles

Me and my wife are trying to make feta from our fresh goats milk from our nigerian goats and got some that has bubbles in it like its swiss or something. what is wrong with it and is it still edible if we brine it. it seems to still taste just fine but didnt want to eat to much in case lol

I have not seen this personally, but I recall seeing some footage of a similar looking cheese a long time ago. From South America somewhere?
Someone in another timezone might get you closer ;)
I would suspect a yeast, it might smell bready?  CO2 bubbles maybe?
Without smelling it I couldn't tell.
