Title: 7 week old Colby

Need to make some mac and cheese so it was time to cut into the Colby. This one is 7 weeks old but still has a good flavor and texture.

Blucrsr, These are raw milk cheese’s and I typically age three months but needed this type of cheese to cook with today.
