Title: Waxing Cheese - Tiny Bubbles...in the wax....

So today, I waxed my gouda and noticed in spots there were these little masses of tiny bubbles in the wax. I put another coat over those spots in case they were weak places, but otherwise anyone know why that might happen and if it's ok? I dipped rather than brushed...

Nope don't know. I get the same thing. I would expect it's becasue there is a little too much fat (oil) in those areas. It beads around it like water and oil. What I do is dab them with a wax brush and then use a hot knife to smooth.

I often have the same problem and have put it down to oil escaping from the cheese.
Do as Arne suggested and break them, wipe away any oil and give another coat of wax.

Even the pros need to do touch ups. I wouldn't worry to much.
