Title: Manchego Rind

Hi, I was looking at some pictures of Manchegos and they have that greenish-black coat or rind. Is it a mold that grows on them? I've made manchego type at home but really have not aged them for long, so mine didn't have that coat. Does anyone know? Thanks.

Based on Manchego that I have purchased, I believe what you are seeing is a coating applied by the maker, not mold.
