Bocconcini Cheese Making Recipe

I read this recipe here with the alterations.
I do not understand one thing.
In red it is said that the curd is left overnight. Then, in black it is said ".....after one hour".....
What hour? If I let it stay overnight, do I leave it for another hour?
Mabe it is something left from the initial recipe, and must not be there....

Sorry I edited the original recipe. After you take the curd out of the fridge wait about an hour for the cheesse to come to room temperature or it will just make your water cold.
