Hello from New Mexico

I am so glad I found this Forum. (Although all etheric roads seem to lead here if Cheese is in the search).
I am pretty new to this. Have made a few soft cheeses, one Gouda and a Cheddar. I built my own Dutch press using ideas supplied here.
My lady friend makes sausage (and raises pigs). We both make mead. I keep bees. We are part of a loose community of folks sharing food, labor and resources here in the semi-rural part of Albuquerque and I want to expand my skills. Plus I love cheesemaking the same way I love gardening, it is a fascinating process.
I wonder; did we domesticate the milk animals and the molds and bacteria, or did they domesticate us?

Welcome!  Love the idea of a loose community sharing labor, skills and trading crops......have 118 acres of land here in the Northeast that I hope gradually becomes something like that with my vision being a neighborhood of folks that like that lifestyle and join efforts when it makes sense, share tools, etc.  Look forward to your cheese posts.
