I think Leiden is the town the cheese was originally made in and it is simply a gouda with cumin seeds added.
That's my understanding, but I will defer to the guy who lives next door to both cities...Herman.  ;)

That does look great , Gouda seems to be a cheese that goes well with other flavors added to it.

Where we used to live there was a couple who had a small artisan cheese company , we used to buy 2 year old Gouda with dill , or garlic , they were both very good.

I have a Gouda of my own with Dill , aging right now , hoping to leave it for a year , and start another one in the meantime , possibly with Garlic this time.
