Just realized (again) how sanitary things need to be.  I have been making cheese on a regular basis and had put a cheddar on the same mat that I had another cheese on without cleaning it.  Well, you guessed it.  Mold.
I used some vinager and got the stuff off and now have it waxed.
I've got to remember to clean my stuff everytime.
Just got back from getting more raw milk.  Time for another cheddar tomorrow as I'm off to take a nap.  Tired for some reason. ::)

It gets everywhere. One of my Farmhouse cheddars that's drying out in my cave right now has a few mold spots.
