G'day curd nerds

Hi all,

Been lurking a little while thought i'd take the plunge and join up and say g'day.

I've been attempting to make cheese at home for a only a few months. it all started when i saw a demonstration on fathers day where a guy made some milk Ricotta. he said making haloumi is not that much more difficult.  That pricked my ears up as i love haloumi. and so i began my foray into cheese making.

I've had 3 attempts at feta got it servable on the third attempt. made some haloumi (it all went on the first night).  and right now i'm attempting to make a cam. (about 2 days in).

I live in the Illawarra region of NSW, australia. we even have our own breed of cow! http://www.ansi.okstate.edu/breeds/cattle/illawarra/ . sadly now its mostly houses where cows once grazed. and those that remain are not Illawarra's
