Bear and Bunny cheese

Alp, would you say that this is a strange shaped swell?  This is an Emmentaler that was not flipped.

What I think I see happening, looking at things, is that the cheeses which are not flipped are more full of holes -they form holes more easily, perhaps. Compare a french emmentaler to the Swiss. The Swiss, in comparison, has much fewer holes but they are perhaps larger.

Too many holes is considered a flaw according to how Emmentaler AOP is graded. Holes must be of the proper size, distribution, and form (i.e. collapsed holes are not good)

Sorry I call them holes and not eyes. In German it is 'Löcher' and not 'Augen"

Bear and Bunny cheese

The cheese in the warm room now was swelling similar to the one above but when it was flipped it weighed down the swell and became more flat.  It will be interesting to compare the hole formation in both.  I will be leaving the present cheese in for the duration you recommended and see how it goes.
THe cheese above is now finally showing signs of geo forming.  Photos to come later.
