Hello Martin, what kind of cheese are you trying to make?

I am learning slowly the art of cheese making so please be gentle, at present I am trying to master the art of making Cheddar cheese.
I started by making soft cheeses which are no really to my taste, I hope to be able to make British Cheeses well.
