That sounds like a spot on caerphilly.  Well done!  This is a really good cheese to learn from, as it involves a number of techniques and is ready quick (so you get feedback quickly).  It's a good cheese to make when you're trying to age others much longer.  Gives you a distraction.  Nicely done.
