Make Butter in Food Processor

I made butter in my food processor last week. 

quart of heavy cream
annatto (extracted with oil) if desired for very yellow color
mix in food processor with multipurpose cutting blade for about 5 minutes
drain buttermilk; save for pancakes (which I made yesterday), cole slaw, etc.
add a handful of crushed ice and continue mixing for another minute and
remove butter, form ball, and knead under cold water
replace water with clean water, knead more, replace water again, repeat until water remains clear during kneading; must remove all buttermilk or it will get rancid at room temp
add 1/2 tsp salt to ball of butter (optional), knead in the salt (not under the water, the salt will wash away!); salt will double the life of the butter
add butter to a form or just leave as a ball; freeze
I got 13 oz from one quart of cream

I did butter one time but like so many things when you consider your time it's not cost effective.  Interesting method and do you notice a difference in taste?  Have you tried a cultured butter?

I think it tastes much better than the butter we usually buy.  It has a distinct flavor and aroma.  Would I do it again?  Maybe, it was pretty easy, but I wouldn't do it regularly. 

I used the buttermilk (~ 3 cups)  to make pancakes this weekend.  They were very tasty!

Real maple, homemade butter (!), but plain GP flour.

Still a pretty stack of 'cakes.  Buckwheat does make for a hearty and tasty pancake.

Probably about 15 minutes.  Because I didn't know what I was doing.  The food processor makes very short work of this.  Most of the time (3 or 4 minutes) is spent kneading the butter under fresh water to remove any buttermilk.  Cleanup is pretty quick, too.

You could eat it right then if you like, and leave it in a ball, or spend more time and form it into a block and freeze.

Hi Bill, I can get Pauls Parmalat at Coles or Woolworths up here in Northern NSW - near Byron Bay.

It is cheaper in Coles.

We can get it down south in melbourne also. It is in a 600ml carton (not bottle). I've only seen it locally in Woolworths though.

I looked in woolies yesterday and couldn't find it, I will try coles tomorrow. (Maybe they were just out of stock!)

I've never seen more than a few cartons on the shelf at once. Given the space allocated, I'm guessing it is not a big seller (at least not where I live).

Good luck finding it. I've used it a coupe of times with my brie.
