  Luckily you didn't have to try and say that last sentence after the rest of that bottle of Malbec!!  I guess that is the advantage of typing... you can hide behind the keys.

I certainly feel your pain on the waiting bit.  It seems like and eternity but my life has been so busy lately that the time is actually flying by... although little time for cheesemaking!

Update: I just flipped the cheese and discovered the beginnings of a couple of small cracks. I suspect that this has something to do with the heavy moisture content in the cheese.
