Enhancing Mozzarella

I just began to make cheese (mainly mozzarella), and I am wondering if there is anything to do to make the mozzarella a little less bland. My mozzarella is always slightly tasteless, so is there anything I can do to enhance the flavor to make it taste better? :P

Som like to add a little lipase, but I'm not sure if it has any effect - I have only tried to make Mozzarella twice...

I have both strong and mild lipase.  Maybe some strong might help it. Perhaps a little garlic powder? Not sure what exactly you're looking for.

In my limited experience, some lipase does make a very welcome difference in taste.

Use good quality milk. That helps. Also, are you salting adequately?

In my own quest to find the flavour of mozzarella, I tasted a few, even at the local Italian store. I suspect it is supposed to taste bland, or else I don't have the appropriate taste buds. Having said that, I just bought, "Rubino mozzarella di bufala campana". I'm waiting until the expiry date to taste it, with the hope there will be some flavour - any flavour!

You can always age it out and make provolone.  :D

I'm new to this but doesn't  Helvetic LH100 (culture used with the thermophilic one) enhance the flavour?

I think you may try some EMC flavours:)
