I hope everyone in and out of the USA who celebrate our Independence Day are having a wonderful weekend.   I've been away for the last month, busy with re-doing our Perfect-Cheese website and product line and (finally) have it back up and running .   Also, our other July 4th (er, 5th ) announcement is the addition of our sister site, Perfect-SousVide.  If you enjoy cooking Sous Vide (cooking using vacuum pouches in a hot water bath) please check it out.
