May Monthly Cheddar

Mal---I have been following your cheddar exploits, and keep meaning to ask, and keep forgetting. How do you handle these lard covered beasts and keep the greasy mess to a minimum----you know---the shelving, the hands and everything else. It seems it could be daunting with so many in the works. I'm referring to after the bandage.

Yo Q! it's not too bad really.  The lard solidifies in my cave @12 DegC so it really isn't too bad.  Keeping them cool it is trick. The shelves get a bit 'Fatty' but not too much, again I don't mind.  I still turn them weekly and clean the shelves with hot water and sanitise them every couple of months.
