Hi, My name is Conrad I am located in the Caribbean and I am looking for a good 500L Cheese that has automatic temperature control. Does anybody have a supplier they can recommend.

500 L is a commercial size vat. These are generally heated with hot water circulating in triple wall system. Outside wall, insulation, middle wall, water cavity, and interior wall. Hot water in the cavity transfers to the interior wall and to the milk. There may be one, but generally when your milk gets to temperature, you just turn the hot water off. With 500 L, there is enough thermal mass to hold temperature for a very long time during, ripening, coagulation, and cooking, so a fancy temperature control is not normally used. My advice. Keep it simple.

Thanks. Another question. What would you recommend for a 100 or 200L VAT. Do you have a supplier you can suggest?

There are lots of companies if you do an internet search, but Ullmers Dairy Equipment carries a lot of good used equipment. Smaller vats are usually not as fancy and not as automated (depending on your budget). Getting it to the Carribean could be a challenge. Where in the Carribean are you?

I am in the Dominican Republic. If the VAT is in the USA we can have it shipped to our warehouse in Miami. Will take from there. But we need the unit to be new. Bye the way I am also looking for Stainless steel utensils and a small packaging machine. Any suggestions.

If you are looking for new I would talk to Margaret at Glengarry Cheese. She is out of Canada but ships to the USA every day. She has stock items but also brings in a lot of custom equipment from Holland. So she can get you anything you want. I have a 1000 liter automated tank that she had made in Holland for us. Margie is a wonderful resource. Please tell her that Ed from Boone Creek Creamery referred you.

You might also want to talk with the folks at Dairy Connection.

As far as packaging equipment, are you looking for a simple vacuum sealer or something automated? Tell me what you are going to make and what you are hoping to accomplish.

Thanks. Will talk to Maggie, I assume her phone I can get in the Internet. Regarding Vacuum sealer what I need for this case is someting simple that I can package one 2LBS cheese at a time.
