I bought these baskets a few years ago and I can't for the life of me remember why.  Ideas anyone?  I did see an Italian basket cheese called Canestrato.  Looks interesting except that know one seemed to like it much.

Look for similar types online at various cheese supply mongers.  If memory serves they are for molding soft curd cheeses - ricotta and the like.  They are not rigid enough for pressing with much weight.

They can be used for fresh cheeses, with little or no weight to press. (You could certainly put, say, 5 lbs on, but probably not much more.) However, they can also be used for making bloomies. No, this is not traditional, at least I don't think it is ... but I have used my basket mold on bloomies with very good results.

I have used it with feta. I plan on trying canestrato style again...

I'm going to make Canestrato as well.  Looks good in the pictures :).  Thanks for the help.
