Good stuff John, the curing part is a learning experience and the flavouring is important also. I remember years ago even doing one with vanilla, strange ! Needless to say I only did the one

Just finishing off a loin ham that I did earlier this year. I portioned it out then vac pac'd and into the freezer. For $1.44/lb you can make some pretty darn good products

Hi Reg I picked up couple of loins @ $1.49 per Lb good price. Will probably do this recipe later this month and will post my thoughts.


Question, I know you can not refreeze without cooking if I thaw out a frozen loin and cure it can I refreeze it without cooking?

 Good question, I have no idea but if I were you I would wait until you had the time to see the process through to the finish then you would know everything is fine.
