Can't even believe this! I thought I screwed up bad! But it looks, smells, tastes and has the texture of Swiss!! I just had to come here to celebrate a victory! I took hiatus from cheese making after a series of fails/temper tantrums... this just might put the wind back in my sails!

I only aged it for about 3 months after my initial room temp period. The recipe (Caldwell) suggested 4 months minimum.. but I'm going to be away from home for 3 months so I had no choice but to break 'er open!! Mild but good! I'm not a fan of strong dry Swiss anyway ;D
