You just want a small fridge ,  or at least the largest fridge you have room for and then a temp controller and there are many posts here in cheese making equipment on the best and the cheapest

Ok thanks greg... my head hurts haha

You can start by using cooler box, if you don't want to buy wine fridge or modify a regular fridge as yet.
It is more work, depend on the temp where you put your cooler box.
All you need is a cooler box and ice blocks, I use square milk bottles with water inside and freeze.
You may need to change the ice blocks 1-2 times a day. On a super hot day, I needed to change them twice but when I wheeled my cooler box inside an aircon room, only once every 36 hours.
I did this for a few months until it get too tedious.
