Does this mean the butter fat is high? Thoughts!

That's just one indicator of high fat content. You'd need to have the milk tested to be sure. Some breeds, like Nigerians, tend to have higher butterfat and better yield than cow's milk. Some milk lines/pedigrees are also known for high yield. Soft cheeses will also have a better yield, as will winter milk. What cheese are you making?

BB, fair question, as above by linuxboy, depends on your water content, I just got 3.2 pounds Feta from 2 US gallons of whole cow's milk.

This was for a cheddar. It was weighed after a couple days of drying. I guess the best way to tell is to have the butter fat checked. Thanks for the replies.

Goat lady could you explain that a little. What they are fed makes the difference or is it the amount?

what you feed and how much impacts the amount of butter fat. for instance if you only let a goat browse the butter fat will be lower then a goat that is feed high quality roughage and grain.
