Widows soup (Maltese cheese)

This is a traditional maltese meal, so named after the widows, when at times their only source of protein came from their eggs and cheese.  The egg it appears is optional, as it doesn't always appear in every recipe.

Make up a vegetable soup how ever you like it.  About 10 minutes before serving add an egg and either stir through, or leave to cook unbroken.  Five minutes before serving dunk a round of cheese into the soup and allow to heat through.
One egg and one round of cheese per person.

Serve the soup and place the cheese in the middle.
Very basic meal, but a nutritious one at that.

My daughter puts chunks of the hard rinds of Parmesan in her Italian soup recipes.

I was just going to say I use all the little chunks that are to small or to hard to grate and throw them in the soup. Can't go wrong with cheese and soup. Although the blues might be different -  blue soup might be weird.

Yep might be weird . . . to some ;).

How about Blue Milkshake?

I guess it all what you are used to! Being raised by 1st generation Italians I lean toward Italian foods because that was I know. Maybe that's why I am so addicted to basil and dill?
