Well, hello again

Hello all,

I'm back! For a disappointingly long time, work and private life have meant that leisure for cheesemaking has been nonexistent. The worm has turned though, and I'm now finding the leisure to play with curds and revisit all you lovely people. Opening my cheese log yesterday I was dismayed to realise that I've made only one cheese in the last 2.5 years and none at all for over a year!

For those who haven't met me, I'm in Tasmania, Australia, and as an Aus-UK dual national focus mostly on the English hard cheeses I can't get in Australia. My aim is to make the perfect Cheshire.

My cheese fridge is mostly empty but I started setting that to rights yesterday by making a new Cheshire for short-ripening. It's made me happy to finally get back to cheesemaking.
