Today my Whilhi Temperature Controller WH7016D failed for my large cave.  For some reason it was reading the temperature above 195 F inside the cave and the compressor was running continuously trying to get the temperature down.  Fortunately I realized the problem before the real temp in the cave dropped below 40 F.  I moved everything to my smaller wine cooler cave but because of the size, I couldn't fit everything unless I removed the mini humidifier.  So I had to bag about 50 lbs. of cheese that was either aging naturally or cream coated along with another 30 lbs. that was already bagged.  I also had a Taleggio and a blue in ripening boxes.  It all barely fit with not one square inch of space left!

I know it is a bad controller because I was able to swap the sensor but got the same readings.  Another Whilhi is on order but now I am not confident that they are reliable as this one lasted less than six months.  Considering the time and cost of making these raw milk cheeses is making me think I should upgrade to better quality commercial controller.

At least the cheese gods were looking out for me this time.

Phew, lucky!
I lost a stack of cheddars when my fridge thermostat blew and froze everything.  That was not nice :(

Hello Duntov,  I am disappointed for what has happened to you, there are thermostats of wine cellar adjustable from 0 to 40 ° C strong enough, I use the model MH1210A, I intend to put a mini fan in the box that works With a mini thermostat w1209 to control the heat in the thermostat box, I hope you find an easy solution to your problem.
