I have been spending time learning more about the history of certain cheeses.  I have attached a few pdf files of some mid 1800's articles on the subject of Cheddar.  All are good reading.  I was particularly amused how they testing for acidity in the Drummond method. 

My understand now is that Cheddar had no standard method of making until the early 1850's and was referred to as Cheddar before that only because it came from the township of Cheddar.

Hello Duntov thank you for sharing honorable, I have to buy milk at the farmer to make Cheddar this is my 2nd attempt, the first was successful I hope so much for the 2 nd trial, 1 Duntov cheese for sharing, Thanks and good continuation.
