Rainbow Cheese

I was feeling a little crazy today, so I made a fun cheese.
It's one of my standards, but I decided to put a little color into it.
Somewhere, some long time ago, milk decided to reach toward immortality... and to call itself cheese.

Pretty cool.  My experience with odd-colored things like this is that it won't be appreciated by anyone but me.  You eat with your eyes, and for others the color is an issue.

I tried to make a blue camembert recently, but the color didn't get into the curds.  I used butterfly pea flowers, which are great for making rice and pasta a tea blue.  It wasn't absorbed by the curds.

This one hasn't caused any problems for anyone for two reasons:
One, it was so crazy, my straight friends thought it was "fun."
Two, my gay friends thought it was hilarious.

Did the colors hold through aging? And what type did you use?

I'd love to make colorful cheese!

For this one I used regular baking food colors as an experiment.
The yellow faded after about 4 weeks. Folowed by the orange. Followed by the red. The green moved more toward blue. The blue remained.
By the time it had aged about 6 months--and we ate the last of it, it was a rainbow of light orange, light pink and pale blue.

Yes Paco—it was a bit of craziness. Today I'm making Asiago but it will be a normal color.

Sí Paco, fue locura. Hoy hago un asiago, pero será del color normal.
